Local Vendor Spotlight: Sunny Brook Farm

Our fifth local vendor spotlight is Sunny Brook Farm out of Whitewater. Here's Karl's As to our Qs:

1. Tell us a little bit about yourself/your mission/family/what you create or farm. (In other words, whatever you’d like to talk about here).

I'm managing fruit and vegetable production on my parents Sunny Brook Farm. Have about 6 acres worked up in garden plots. My goal is to produce as many types and varieties of crops as possible. To grow them in a way that will improve the soil and local ecosystem. My hope is that over the years as I improve the soil, that my produce will become more nutrient dense and more delicious.

2. What’s your favorite thing to do on/at the farm?

My favorite thing to do on the farm is to give tours of the farm. I like to show off a bit of the things that I see going on every day. It gives me a chance to take a step back and look at the big picture, sometimes I'm so focused on a specific planting, harvest, cultivation that I miss what's going on in other parts of the garden and farm.

3. Do you have a go-to recipe to share? And why is it your #1 go-to?

My go to recipe is Cheesy Potatoes. It's my go-to because I like eating it and it's easy to make. Plus I can use my own potatoes!

about 6 cups cubed potatoes (1 Package (32 oz) frozen cubed hashbrown potatoes)
1 small-medium onion finely chopped
optional diced pepper sweet or hot 
1 cup sour cream
1 can condensed cream of mushroom soup
1/4 cup butter
3/4 t. salt
1/4 t. pepper
2 cups shredded cheese

Combine all ingredients put in a baking pan or casserole top with shredded cheese mixing a little of the cheese into the potatoes. Bake at around 350 for about 50min.-60min or when potatoes are cooked to desired tenderness.(45-50 min for frozen spuds)

4. What’s a little known fact about you or your farm?

I'm the 5th Generation Knuteson on Sunny Brook Farm. The first publicly posted YouTube video was of me in the field behind the barn solving a Rubik's Cube.

5. What are you most looking forward to about the Whitewater Grocery Co.?

Not having to buy food at Walmart.
