One of our fantastic Owners, Therese McKenzie, made a very popular chili for the recent Whitewater Freeze Fest!
Since a number of people are jonesin' for the recipe, we are eager to share it!
Very Veggie Chili
- 1 lb ground beef
- 1 onion, chopped
- 1 zucchini, diced
- 1 green pepper, diced
- 2-3 stalks celery, chopped
- 1-2 large cans diced tomatoes (28 oz each)
- 2 cans chili beans (beans in a chili gravy) *do not drain
- 1-2 Tbsp chili powder
- 1 tsp. cumin
- 1½tsp salt
- 1 tsp chopped garlic
- dash of pepper
Brown ground beef with chopped onion. Sauté other vegetables in a bit of olive oil. Mix together all ingredients in a pot and simmer for one hour. Serve with cornbread muffins.
