Owner Therese McKenzie's Freeze Fest Chili Recipe

One of our fantastic Owners, Therese McKenzie, made a very popular chili for the recent Whitewater Freeze Fest!

Since a number of people are jonesin' for the recipe, we are eager to share it!

Very Veggie Chili


  • 1 lb ground beef
  • 1 onion, chopped
  • 1 zucchini, diced
  • 1 green pepper, diced
  • 2-3 stalks celery, chopped
  • 1-2 large cans diced tomatoes (28 oz each)
  • 2 cans chili beans (beans in a chili gravy) *do not drain
  • 1-2 Tbsp chili powder
  • 1 tsp. cumin
  • 1½tsp salt
  • 1 tsp chopped garlic
  • dash of pepper


Brown ground beef with chopped onion.  Sauté other vegetables in a bit of olive oil.  Mix together all ingredients in a pot and simmer for one hour. Serve with cornbread muffins.
